Aji Amarillo Tuna Ceviche

All ingredients are to taste–you can play with the amounts and the type of fish you use.
Raw, fresh tuna
Yellow bell peppers
Yellow Ají Paste
Fresno Chili Pepper
Serrano Chili, thinly sliced
Salt, to taste
1. Create the Yellow Leche de Tigre by blending celery, garlic, cilantro, lime juice, habanero, yellow bell pepper, yellow Ají paste, Fresno chili pepper, orange juice and
2. Pour into the bottom of the dish and set your tuna on top of the Leche de Tigre.
3. Top with thinly sliced serrano chili, cucumber, onion, micro-cilantro, and salt to taste.
