AHU l MAR at DUA Miami
AHU l MAR at DUA Miami and Chef Victor Rosado are highlighting their decadent and innovative selection of Oysters. Chef Rosado’s oyster dishes were conceptualized to highlight their unique flavor and texture while putting his unique spin on the timeless delicacy enjoyed worldwide.
Oyster on the Beach – $6 ea: “This oyster reminds me of my days in Puerto Rico, where the gentle waves crashing on the sandy beaches inspired the creamy, foamy texture that now tops these shells.”
Oyster & Pearls – $15 ea: “This dish represents my early days in the culinary world, a time of discovery and simplicity. It’s about celebrating the purity of ingredients and the art of fine dining.”
“Baked” Oyster – $6 ea: “Inspired by my time as the dedicated chef for allergies and dietary restrictions at the Ritz Carlton Reserve, this dish originated from a wedding menu creation. I adapted a traditional baked oyster recipe to accommodate the husband’s gluten intolerance while preserving the dish’s original look and integrity.”
