Edge, Steak and Bar at Four Seasons Hotel Miami Celebrates Australia Day

Aussie specials and poolside “barbie” with Chef Aaron and his mates January 24-31, 2016

Aaron Brooks, Aussie native, and Executive Chef at EDGE Steak & Bar brings Australia Day to Four Seasons Hotel Miami in Brickell. Named Miami’s “Lambassador” by Meat & Livestock Australia, Chef Aaron pays homage to the land Down Under and its January 26 national holiday with a week-long celebration of authentic Aussie fare. Festivities kick off with a special poolside Barbie with Chef Aaron and his Mates on Sunday, January 24, 2016, from 1:00 to 4:00 pm, and continue with restaurant specials of Australian pasture-raised lamb and beef available during lunch, dinner and Sunday Brunch through January 31, 2016. Chef Aaron’s mates, Jose Mendin of Pubbelly Restaurant GroupMike Pirolo of Macchialina and BaziTimon Balloo of SUGARCANE raw bar grill, and Jamie DeRosa and Chef de Cuisine William Crandall of Izzy’s Fish & Oyster, turn up the heat for a family-friendly poolside event, featuring each of their BBQ favorites, locally crafted beer by J Wakefield Brewing, The Tank Brewing Co., Wynwood Brewing Company and Australian wines.

Guests are invited to bring their budgie smugglers (swimsuits) and enjoy access to the two resort-style pools, celebrating winter in true Miami fashion – under the sun. Continuing Monday, January 25, Chef Aaron features his renditions of a few of his favorite dishes from back home on the menu at EDGE. An Aussie meat pie serves as a main course option on the USD 23, three-course Lunch Break menu; and for dinner guests will find shrimp “off the barbie,” an Australia lamb and a twist on his mum’s sticky date pudding. A few more surprises from Down Under await on Sunday, January 31 at EDGE Brunch, concluding the Australia Day celebration.
