Exclusive menus will be available at the iconic resort’s award-winning restaurants, including Pizza & Burger by Michael Mina, StripSteak by Michael Mina and Scarpetta by Scott Conant, and Hakkasan. From family-friendly menus to extravagant five-course prix-fixe dinners with Prime Rib Cap, Butter Poached Maine Lobster, Sapphire Noir Chocolate, and Hazelnut Torta, the iconic Fontainebleau Miami Beach is a great way to celebrate the end of the year.

Scott Conant’s restaurant will be offering a mouthwatering four-course Christmas menu priced at $95 per person, excluding tax and gratuity. Available from 6 PM-midnight on Christmas Eve and Christmas Day, diners will have a choice of Tuna Tartare, Grilled Octopus, Beef Carpaccio, Burrata, or Insalata Mista to start. Second course options are a Short Rib Lasagna or Risotto Vialone Nano al Tartufo Nero. Third-course choices are Black Cod, and Veal Scaloppine ai Funghi, Braised Lamb Shank, or Parmigiana di Melanzane. Dessert options include a Mascarpone Fondente or Chocolate Millefoglie.

For New Year’s Eve, the restaurant will be offering a mouthwatering three-course prix-fixe menu. The first seating is from 6 PM – 7:30 PM and is priced at $150 per person, excluding tax and gratuity. Diners can choose from Steak Tartare, Stracciatella and Culatello di Zibello, Tomato Salad or Tagliatelle ai Funghi e Tartufo Nero. For the main course, choose from Filet of Beef, Branzino, Braised Ossobuco, or Gnocchi. For dessert, enjoy Honey Snap and Mascarpone Cannoli or Sapphire Noir Chocolate and Hazelnut Torta.

The second seating is from 7:30 PM – 10:30 PM and offers a four-course prix-fixe menu priced at $250 per person, excluding tax and gratuity. This menu begins with a choice of Pan Seared Scallops, Steak Tartare, Stracciatella, and Foie Gras or Tomato Salad. For the pasta dish, diners can choose from Tagliatelle ai Funghi e Tartufo Bianco or Shrimp Gnocchi. Main course options include Branzino, Filet of Beef, or Braised Veal Osso Bucco. StripSteak, Fontainebleau’s modern American steakhouse by celebrity chef Michael Mina, will be offering a decadent family-style prix-fixe menu from 6 PM-midnight on Christmas Eve and Christmas Day. Priced at $125 per guest, diners can indulge in a Chilled Seafood Tower with shrimp cocktail and stone crab; Baby Spinach and Frisse Salad with warm bacon smoked almonds and cranberry cabernet apples; Sautéed Sea Scallops with roasted squash puree and ginger gastrique; Wood-Grilled Chateaubriand with Maître d’ butter with Bordelaise sauce; Haricot Vert with bourbon tomato bacon jam and crispy shallots, and Roasted Yams with citrus meringue. Dessert is a Chestnut Crème Brulée.

Ring in the New Year with a three-course prix-fixe menu by chef Michael Mina. The first seating is from 6 PM – 7:30 PM and is priced at $175 per person, excluding tax and gratuity. To start, diners can enjoy a choice of Beet Root Mille-feuille, Tuna Tartare, Parisian Gnocchi, Foie Gras Brulee, Butter Poached Maine Lobster. Following this, diners can choose between Black Sea Bass, Parmesan Crusted Chicken, Roasted Lamb Chop, or Prime Rib Cage. For dessert, choose from the Manjari Chocolate Custard or Pistachio Nougat Glace.

The second seating is from 7:30 PM – 10:30 PM with a four-course prix-fixe menu for $250 per person, excluding tax and gratuity. The menu includes a choice of Tuna Tartare, Endive Salad, or Beet Root Mille-feuille. Second-course options are Parisian Gnocchi, Foie Gras Brulee, or Butter Poached Maine Lobster. On New Year’s Eve from 6 PM-midnight, the restaurant will offer a three-course, prix-fixe dinner for $79 per person (excluding tax and gratuity.) Guests can choose up to three appetizers for the table from Wings, Nachos, The Greek Salad, The Caesar Salad, or one of the featured pizzas like the Standard, the Pork Store, or the Veggie. A four-course prix-fixe First seating is from 6 PM – 7:30 PM and is priced at $175 per person, excluding tax and gratuity. The family-style feast will begin with a classic Dim Sum Platter with Steamed Golden Jade Har Gau, Scallops Shui Mai with crab roe, Black Truffle Duck with pumpkin dumpling and Shrimp with Chinese chives dumpling; the appetizer is a Traditional Peking Duck; entrees include Charcoal Grill Chilean Sea Bass with wildflower honey, Wok-fried Wagyu Beef with black pepper sauce and Chicken Fried Rice with foie gras in lotus leaf. Dessert choices include Chocolate Mousse ‘Penzai’ and Sweetcorn Soft Meringue.
